Right now this is what is available for ee3 Personal Information Only – This will require the First Name, Last Name and email address for each attendee (primary + additional attendees)
I would like to change it to
Name
Age
How would I do that.

The short answer is, you can add and require an age question, but EE3 registrations all require First Name, Last Name, and Email address.
EE4 lets you require only one name field + custom fields for additional attendees, so you might consider upgrading to EE4.

Documentation for managing questions/question groups for EE3 is available here:

Note as Josh mentioned above, EE3 will always require First Name, Last Name and Email address within the Personal Information question group. You can add additional questions but you can not remove those 3.
