I have paid for a reset and our clients site is now live.
My account still says that it is pending.
How long does this reset take?

Why have all our settings disappeared?
It looks like as soon as we changed nameservers, all the settings have reverted to the defaults.

Might be that the names of your database tables have changed? Usually the settings will stay intact, unless you used some kind of back up and restore plugin. I usually use a plugin called WP Migrate DB to move sites to different servers, because it keeps the data and database tables intact.
