I’m constructing my site using Woo Canvas and am trying to create listings and a booking system like the one used here: http://lsptraining.co.uk/
With event/course listing like they have here: http://lsptraining.co.uk/only-level-1/
I can see that this site uses Event-Espresso plus Espresso-Calendar. Is this all I would need and would it matter whether I went for EE3 or EE4?

That site uses Event Espresso 3. In regards to templates (visuals) EE3 and EE4 are vastly different systems, EE4 follows WordPress templating more closely than EE3, although EE3 can often be easier to customise if you are not used to themeing.
To achieve the effect used on that site would require some custom development to the sites theme & Event Espresso templates. So this would require knowledge of PHP, HTML and CSS.
So to answer if this is all you would need, technically yes you could do all of the features you have linked to, although that is NOT Event Espresso’s default output. So this would require customisations and would not be simply plug and play, you would likely need the help of a developer (I would recommend contacting one of our Pro’s available here)
EE4 supports only the Calendar Add-on currently so the choice of either would depend on your other feature requirements.
