Is there a way for me to change the View Full Order Confirmation Receipt button located on the Thank you page so it takes the attendee to the Invoice instead?

Hi there,
We don’t have a filter for this but you can override the template file that used for the thank you page, add the invoice button and then remove the receipt button yourself.
I have an example of how you can remove the receipt button and display an Invoice button here:

So you could copy the original thank you page template:
\event-espresso-core-reg\modules\thank_you_page\templates\thank-you-page-overview.template.php
Place that file in your themes root directory (preferably a child theme) and edit that template to include the code from the above, or copy that code into a .php file, name the file thank-you-page-overview.template.php and again place that file within your themes root directory.
