Here is an overview of how the MailChimp add-on currently works.
During registration checkout, an attendee/registrant is added to a specific list on MailChimp if one has been enabled for an event. They do have to opt-in to be added to the list by clicking on a link in a confirmation email from MailChimp.
Event Espresso is not notified of who has clicked that link so there isn’t an accurate way to see who has already opted-in.
With that mentioned, you can go to Event Espresso –> Events. Then hover over the name of an event and then click on registrations.
The next page will show you a list of registrations for this event. Scroll down to the end of the page and then click on the Registrations CSV report button. This will have information about the registrants/attendees for this event such as name and email and other information.
