We are having to at least twice a day reset ticket counts. Events are showing as sold out even though they are not and even ‘reserve’ tickets are actually under the ticket capacity.

Can you send me a link to your event(s) of this occurring and include a screenshot of the event editor showing the sold/reserved counts?
