There really isnt an easy way of doing this. The time is actually not held int hat database, and is pulled in via a different function.
It could be possible to pull that database table into the query but I had a hard time doing so. I’ll see if a developer can have a look and see if it is possible or not with the current way the shortcode is designed.
There’s a way to add in the start times to the query so that it can order by date then time. Normally it only pulls in date.
I posted a gist of a modified espresso_display_table function (link below). You can replace the espresso_table_function that is included in the espresso_table.php template with the one in the gist to add time ordering.
