I would like to simplify the “event registrations report” that is downloaded when selected. It comes out as an excel doc with many categories that I would like to eliminate/customize. Is this possible?

Yes this is possible to remove specific columns by making use of the WordPress plugin API. You’ll find some examples here:

Possibly.
If you can provide temporary access to the server’s files (sFTP is preferred) along with a detailed list of changes (basically which columns you want removed) we can put together a custom snippet and add it to your site.
