How can I change the text of ‘Add to Cart’ to something else like ‘Buy ticket’?

Hello,
You can do this in one of two ways.
The easiest is to change the language file that you are using (probably the default US English one) to change the term.
Or you can look at the actual file to change it, it will be in the event_list_display.php file located in the templates directory.

I don’t have the file event_list_display.php in templates. I have, event_list_secondary.php & event_list_table.php, is it one of these two?

No it isn’t either of those (possibly could be event_list_table but I cannot see a table of events anywhere on your site so I am doubtful).
You can copy the event_list_display.php file from event-espresso/templates to uploads/espresso/templates and make the modifications there.
If you do that, please also copy the event_list.php file, it needs to be copied to the same place otherwise the modifications wont work.
