I’ve created an event, and attendees are set to unlimited. How do I make this field not show at all it it’s unlimited?

Also, if I set a begin time, and no end time to an event, how do I hide the end time field?

Are you talking about the event list, (templates/event_list_display.php) or the registration page (templates/registration_page_display.php)? Are you using the MER shopping cart registration process?
P.S. If you want to modify either of those templates, make sure you copy them and their corresponding logic page (templates/event_list.php or templates/registration_page.php) over to the uploads/espresso/templates directory to preserve your changes during updates to EE.
