Dates not saving to the database properly

Hi there,
I have just started using EE and I have created my first event. I am selecting a date (say the 26th of May) in ANY of the event fields. (Start Date, Sales Date etc) As soon as I click update, the date all the dates change to a random date. I CANNOT get my selected dates to save.

Also, is there a way to turn off sale start and sell until? This is not a useful feature and not intuitive.
