Creating Sessions For An Event

Can anyone point me to some documentation or have any ideas on how to create an overarching event where each session is priced individually and registrants can just check the sessions they want to attend?

I think you are going to have to create separate events for each session and use multiple event registration “add to cart” for selecting the sessions.
