From reviews and the site I think I can do this but am not sure how to set it up.
I have one course that is composed of two parts. These parts are offered in alternating order and participants can register for any two, as long as the first part comes before the second. Ideally it would be a drop down menu.

This is currently available in the core plugin:
It will allow me to create one event with two parts and have drop downs with different dates for each part?
You could create an event via the event editor in your WP dashboard with the following ticket options:
July – Part 1
July – Part 2
August – Part 1
August – Part 2
September – Part 1
September – Part 2
The approach above will work well if you add a few months at a time (e.g. create an event for each quarter of the year). However, if you try to create tickets for each month of the year, then you’ll end up with a long ticket list which could be overwhelm registrants.
One other thing that you’ll want to do is to click on the gear icon (advanced options icon) in the ticket editor for each ticket option. Then set the minimum and maximum to one. Then save changes to the event via the event editor.
