I’ve got event with few dates and one ticket. Let’s say this is recurring event avery Sunday. I don’t see any option for visitor to choose at which date he’s buying the ticket (it seems to work on every date).
I’ve tried to buy such ticket, and all dates’ Sold counter was incremented.

Yes, you need to create tickets that apply to specific datetimes.
So if you have say 4 datetimes and wish for users to register onto specific datetimes you’ll need to create a ticket for each datetime and then assigned the tickets to specific datetimes.
Possibly yes, it all depends on how the event is set up.
