How do we change the labels on the event ticket listing?

Which labels?
The table headers? (Lesson Times, Booing Fee, Qty)
If so those are the default for Event Espresso so it looks like someone already has altered those on your site.
Theres a couple of different ways to change those, usually its done using filter and for those those are:
FHEE__ticket_selector_chart_template__table_header_available_tickets,
FHEE__ticket_selector_chart_template__table_header_price,
FHEE__ticket_selector_chart_template__table_header_qty
Check for any custom code on your site hooking into those filters.
