How to enable all countries in the drop down list.

Hi
On my one site: https://icbmd.org.za/registration-checkout/?uts=1718315094#checkout the country lists all available countries.
On my other site: http://www.u6conference.org I only get three countries.
We are running an international conference – do I need to enable all countries individually or is there a way to import all countries in one go.
I came across a mention of a plugin in an older post but the link is no longer active.
